The exceptional quality fruit for this wine was hand-harvested from the South Burnett’s oldest and highly-acclaimed grape vines, grown in the Barambah Wines vineyard. This Rack Dried Shiraz – from an outstanding 2012 vintage- was made from hand-harvested portions of whole bunches. These dried for seven days on racks of Barambah design by renowned Master of Wine Peter Scudamore-Smith to concentrate the fruit sugars and intensify flavours.
Similar to the Italian “Amorone” style, portions of the harvest are fermented as whole bunches with standard shiraz, and aged in old French hogshead oak for 33 months. Delivering incredibly concentrated fruit flavours, balanced yet rich tannins and bold flavours, this ancient style of Rack Dried Shiraz is lip-smacking, intense and craves to be enjoyed with a large juicy steak, char-grilled lamb, or with rich dark chocolate dessert (Black Forrest cake would be perfect).
