Masterfully crafted by the skilled hands of highly regarded chef Wayne Smith (ex – Frogmore Creek Winery Restaurant, Tasmania and the famed La Goulue Restauarnt, Sydney) from Cassis at Booie Restaurant (the old Belltower restaurant) just north of Kingaroy, Potted Porker is a French-style treat utilising the South Burnett’s finest export, the humble pig. Rillettes are similar to pâté, but utilise slow-cooked and shredded meat rather than liver to create a flavoursome, rustic treat. Using the finest quality pork sourced from local food icon Swickers (the largest pork processor in the Southern Hemisphere, and makers of the iconic Barker’s Creek Pork), this is the most traditional and authentic of meats to make this mouthwatering spread.
Smear on crusty bread or your favourite cracker, and to really let the delicate flavours shine through, remove from the fridge 20-30 minutes before serving.
